No-Bake Chocolate Oatmeal Cookies

Classic stovetop no-bake cookies: sugar, butter, milk and cocoa boiled for exactly 1 minute from a full rolling boil, then peanut butter, vanilla, salt and quick oats stirred in and dropped onto parchment to set for 30 minutes. Makes 24.

Ingredients
  

  • 2 cups granulated sugar
  • 1/2 cup butter cut into pieces
  • 1/2 cup milk whole or 2 percent
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter regular, not natural
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 3 cups quick oats not old-fashioned or steel-cut

Instructions
 

  • Line two baking sheets with parchment paper. Measure the peanut butter, vanilla, salt and oats and set them next to the stove; the mixture sets fast once it comes off the heat.
  • In a medium saucepan combine the sugar, butter, milk and cocoa powder. Warm over medium heat, stirring, until the butter has melted and the sugar no longer feels gritty.
  • Raise the heat to medium-high and bring the mixture to a full rolling boil, with large bubbles breaking across the whole surface. Start a timer only now and boil for exactly 1 minute, stirring. Take the pan off the heat when the timer goes.
  • Off the heat, stir in the peanut butter, vanilla and salt until smooth.
  • Stir in the quick oats until every oat is coated. Let the mixture sit for 1 to 2 minutes so it thickens slightly and the scoops hold their shape.
  • Drop the mixture by rounded tablespoons (about 1 1/2 tablespoons each) onto the parchment. They do not spread much, so a little space between them is enough.
  • Leave the cookies at room temperature for about 30 minutes, or refrigerate for 30 minutes, until firm enough to lift with a spatula. On a hot or humid day allow up to an hour.

Notes

Time the 1-minute boil from a full rolling boil, not the first bubbles: too short and the cookies stay sticky, too long and they turn dry. Use quick oats, regular (not natural) peanut butter and real butter. Once fully set, store airtight with parchment between the layers; most recipes keep them about 1 week at room temperature or up to 2 weeks in the fridge. Freeze on a tray until solid, then bag for up to 3 months. USDA FSIS says to keep the fridge at 40 F or below and to seal leftovers airtight.
