No-Bake Chocolate Oatmeal Cookies are the cookies for when the oven is busy or the kitchen is already too warm. Butter, sugar, milk and cocoa go into a saucepan, boil for one minute, and then peanut butter, vanilla and quick oats get stirred in. Spoon them onto parchment and half an hour later you have two dozen fudgy, chewy cookies.
How to make no-bake chocolate oatmeal cookies: warm 2 cups of sugar, 1/2 cup of butter, 1/2 cup of milk and 1/4 cup of cocoa in a saucepan until the sugar dissolves, then bring it to a full rolling boil and boil for exactly 1 minute. Take the pan off the heat, stir in 1/2 cup of peanut butter, 1 teaspoon of vanilla and 1/8 teaspoon of salt, then 3 cups of quick oats. Drop rounded tablespoons onto parchment and let them set for about 30 minutes.
Why You’ll Love It
- No oven. Five minutes at the stove is the only heat.
- Eight ingredients. Sugar, butter, milk, cocoa, peanut butter, vanilla, salt and oats. That is all.
- Ready in 45 minutes. Ten minutes of prep, 5 of cooking, 30 to set.
- They keep. Most recipes keep them about a week at room temperature, and they freeze for up to 3 months.
Ingredient Notes
Quick oats are the ones to buy. They soften in the hot syrup; rolled and steel-cut oats will not soften enough, and two sources say plainly not to swap rolled oats in. One recipe uses old-fashioned oats, which give a chewier cookie, but for the classic soft one use quick oats and stick to 3 cups. More than that makes them dry.
Peanut butter should be the regular creamy kind, not natural. One source says natural peanut butter makes dry, crumbly cookies, and another says to use regular.
Butter is the fat, and it needs to be real butter. Replacing it with oil will not work; the cookies need a solid fat to set. Whole or 2 percent milk both work, and the cocoa is plain unsweetened cocoa powder.
Ingredients
- 2 cups granulated sugar
- 1/2 cup butter, cut into pieces
- 1/2 cup milk, whole or 2 percent
- 1/4 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter, regular, not natural
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 3 cups quick oats, not old-fashioned or steel-cut
How to Make No-Bake Chocolate Oatmeal Cookies
1. Line the pans. Line two baking sheets with parchment paper. Measure the peanut butter, vanilla, salt and oats and set them next to the stove; the mixture sets fast once it comes off the heat.
2. Melt and dissolve. In a medium saucepan combine the sugar, butter, milk and cocoa powder. Warm over medium heat, stirring, until the butter has melted and the sugar no longer feels gritty.
3. Boil for one minute. Raise the heat to medium-high and bring the mixture to a full rolling boil, with large bubbles breaking across the whole surface. Start a timer only now and boil for exactly 1 minute, stirring. Take the pan off the heat when the timer goes.
4. Stir in the peanut butter. Off the heat, stir in the peanut butter, vanilla and salt until smooth.
5. Add the oats. Stir in the quick oats until every oat is coated. Let the mixture sit for 1 to 2 minutes so it thickens slightly and the scoops hold their shape.
6. Scoop. Drop the mixture by rounded tablespoons (about 1 1/2 tablespoons each) onto the parchment. They do not spread much, so a little space between them is enough.
7. Let them set. Leave the cookies at room temperature for about 30 minutes, or refrigerate for 30 minutes, until firm enough to lift with a spatula. On a hot or humid day allow up to an hour.
Why No-Bake Cookies Don’t Set (or Turn Dry)
Almost every problem with these cookies comes down to the boil. The rule most recipes agree on: boil for exactly 1 minute, timed from a full rolling boil. That means large bubbles breaking across the whole surface, not the first few bubbles at the edge. Start the timer then, not before. Recipes vary a little: one boils 2 minutes, one 1 minute 30 seconds, two give a 1 to 2 minute range. All of them are aiming for soft-ball stage, about 235 to 240 F, and 1 minute is the number to use if a past batch came out dry.
Two more things matter before the boil. Make sure the sugar has fully dissolved while the mixture warms, or the cookies turn out grainy. And measure the milk and butter carefully; one source quotes a pastry chef saying mis-measured liquids throw the recipe off.
| What went wrong | Likely cause | Fix |
|---|---|---|
| Sticky, shiny, will not set | Boiled too short; the syrup never reached soft-ball stage | Scrape it back into the pan, reboil briefly, add 2 to 3 tablespoons more oats until it holds its shape |
| Will not set on a rainy day | High humidity | Boil to the top of the range, or give them more time with a low fan, or wait for a dry day |
| Dry and crumbly | Boiled too long or too hot | No fix in the sources; crumble over ice cream or yogurt, or press into a crust |
| Dry and crumbly, boil was right | Natural peanut butter, or too many oats | Use regular peanut butter and no more than 3 cups of oats |
| Will not set, used oil | Liquid oil in place of butter | Use butter; a solid fat is needed to set |
A candy thermometer is a good backup: pull the pan at 235 to 240 F. Without one, drop a spoonful into ice water; it should form a soft ball. The timer is still the recipe step; the thermometer just confirms it.
Without Peanut Butter
You can leave the peanut butter out. The boiled sugar is what holds these cookies together, not the peanut butter, so a version without it sets fine as long as the fat is solid butter or coconut oil, not liquid oil. One recipe uses 8 tablespoons butter, 1 1/2 cups sugar, 1/2 cup milk, 3 tablespoons cocoa, 1 teaspoon vanilla, 1/8 teaspoon kosher salt, 3 cups old-fashioned oats and 1 cup shredded coconut (or 1/2 cup extra oats instead of the coconut). It boils 1 minute, rests 5 minutes after the oats go in, then is scooped and cooled 20 minutes, for 12 to 14 large cookies. Another base recipe has no peanut butter at all and lists 1/2 cup as an optional add after the boil.
Variations
- Coconut. Stir in 1 cup of shredded coconut with the oats. One recipe adds it to the base and gets 3 dozen cookies.
- No peanut butter. Follow the version above, or just leave it out of this recipe; the boiled sugar does the binding.
- Chewier oats. Use old-fashioned oats in place of quick for a chewier cookie, and let the mixture sit 5 minutes after adding them so they soften.

Storage & Reheating
Once fully set, most recipes keep them in an airtight container with parchment between the layers, about 1 week at room temperature or up to 2 weeks in the refrigerator. To freeze, spread them on a tray until solid, then move to a freezer bag for up to 3 months; thaw at room temperature or in the fridge. There is nothing to reheat.
The cookies contain milk and butter, so the general rule is worth knowing. USDA FSIS says the refrigerator should be at 40 F or below, leftovers should be sealed airtight, and perishable food left out more than 2 hours (1 hour above 90 F) should be thrown away. FSIS does not address boiled-sugar cookies; the week on the counter is what the recipe sites do, not an FSIS number.
What to Serve With It
For a plate of chocolate and peanut butter things, add peanut butter and chocolate Rice Krispie treats and a batch of chocolate peanut butter balls with Rice Krispies, which use the same jar of peanut butter. The chocolate peanut butter Rice Krispie cups are the tidy, portioned version of the same idea. For a tray that is not all peanut butter, a pan of old fashioned fudge comes off the same stove, and the no bake Payday nut squares are another no-oven bar. When you do have the oven on, oatmeal raisin cookie bars use up the rest of the oats.
Frequently Asked Questions
How long do you boil no-bake cookies?
Exactly 1 minute, timed from a full rolling boil with large bubbles across the whole surface. Some recipes go to 1 minute 30 seconds or 2 minutes, with soft-ball stage (235 to 240 F) as the real target. If your last batch was dry, use the 1-minute end.
Why won’t my no-bake cookies set?
The most common cause is boiling too short; the syrup never reached soft-ball stage, so it stays thin and the cookies stay sticky and shiny. Rain or high humidity can also stop them setting, and oil in place of butter will not set at all. To fix a runny batch, put it back in the pan, reboil briefly and add 2 to 3 tablespoons more oats until it holds its shape.
Why are my no-bake cookies dry and crumbly?
The most common cause is boiling too long or too hot. Natural peanut butter also makes them dry and crumbly, and so does going over 3 cups of oats. None of the sources gives a way to soften an over-boiled batch, but they are good crumbled over ice cream or yogurt, or pressed into a crust.
Can I use old-fashioned oats instead of quick oats?
The recipe is written for quick oats, which soften in the hot syrup; rolled and steel-cut oats will not soften as much. One recipe uses old-fashioned oats, which give a chewier cookie and lets the mixture sit 5 minutes after adding them. Do not expect the same soft result.
Final Notes
Everything about these cookies comes down to one minute at the stove, so set a timer and start it when the boil is truly rolling. Keep the oats at 3 cups and the peanut butter regular, and they set into soft, fudgy cookies. Two dozen goes quickly.
