Ingredients

  • 1 1/2 cups granulated sugar
  • 1/4 cup butter
  • 1/2 cup milk
  • 1 cup creamy peanut butter regular commercial peanut butter gives the most consistent results
  • 1 teaspoon vanilla extract
  • 3 cups old fashioned oats quick oats also work

Instructions

  • Cover a baking sheet with wax paper and set it aside. Measure the peanut butter, vanilla and oats and keep them next to the stove, because the mixture sets fast once it comes off the heat.
  • In a large saucepan over medium heat, stir together the sugar, butter and milk. Bring to a boil, stirring frequently. Once it is boiling, keep it at a rolling boil for exactly one minute.
  • Turn off the burner and stir in the peanut butter until smooth. Stir in the vanilla and oats until combined.
  • Working quickly, drop mounds of any size onto the wax paper. A small or medium cookie scoop makes even cookies.
  • Let the cookies cool and set, about 15 minutes in the refrigerator, then serve.

Notes

Keep in an airtight container on the counter for 3 to 4 days, or in the refrigerator for up to 1 week.
