No Bake Peanut Butter Oatmeal Cookies are quick stovetop cookies with just six ingredients: sugar, butter and milk boiled for exactly one minute, then stirred with creamy peanut butter, vanilla and old fashioned oats and dropped onto wax paper to set. No oven, no cocoa, just peanut butter flavor. They take about 5 minutes to prep, 10 minutes on the stove and a short chill, and make about 36 cookies.
How to make them: Line a baking sheet with wax paper and measure everything first. Bring the sugar, butter and milk to a rolling boil and hold it there for one minute. Off the heat, stir in the peanut butter, then the vanilla and oats, and quickly scoop mounds onto the paper. Chill about 15 minutes until set.
Why You’ll Love Them
- No oven: everything happens in one saucepan.
- Six ingredients: all pantry staples.
- Ready fast: about 30 minutes from start to set cookies.
- A big batch: about 36 cookies from one pot.
Ingredient Notes
Sugar, butter and milk: 1 1/2 cups of granulated sugar, 1/4 cup of butter and 1/2 cup of milk make the base that sets the cookies.
Creamy peanut butter: 1 cup. Regular commercial peanut butter gives the most consistent results. Natural peanut butter is thinner and oilier; stir it very well first, and the cookies may take longer to set.
Vanilla: 1 teaspoon of vanilla extract.
Oats: 3 cups of old fashioned oats. Quick oats work too and make a softer cookie; old fashioned oats give a chewier one.
Ingredients
- 1 1/2 cups granulated sugar
- 1/4 cup butter
- 1/2 cup milk
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 cups old fashioned oats (quick oats also work)
How to Make No Bake Peanut Butter Oatmeal Cookies
1. Line the pan. Cover a baking sheet with wax paper and set it aside. Measure the peanut butter, vanilla and oats and keep them next to the stove, because the mixture sets fast once it comes off the heat.
2. Boil the sugar mixture. In a large saucepan over medium heat, stir together the sugar, butter and milk. Bring to a boil, stirring frequently. Once it is boiling, keep it at a rolling boil for exactly one minute.
3. Stir in the peanut butter and oats. Turn off the burner and stir in the peanut butter until smooth. Stir in the vanilla and oats until combined.
4. Scoop the cookies. Working quickly, drop mounds of any size onto the wax paper. A small or medium cookie scoop makes even cookies.
5. Cool and set. Let the cookies cool and set, about 15 minutes in the refrigerator, then serve.
The Secret: A One-Minute Boil
The boil decides everything. Start the timer only when the mixture is at a full rolling boil across the whole pot, not just bubbling at the edges, and take it off the heat at exactly one minute:
- Too short: the cookies won’t set all the way and stay runny.
- Too long: they turn out dry and crumbly.
- Just right: one minute holds them together and keeps the middle soft.
Every stove and pot is a little different. If your cookies come out drier than you like, cut the boil by about 15 seconds next time instead of adding liquid.
Common Mistakes and How to Fix Them
- Not measuring carefully. Too many oats or too much peanut butter also makes them dry. The recipe depends on the ratio of wet to dry, so measure carefully; a kitchen scale helps.
- Not having everything ready. The mixture sets quickly, so have the peanut butter, vanilla and oats measured before you start the boil.
- Cookies spreading flat. If the first cookie spreads into a thin disk, let the mixture stand a minute or two so the oats soak up some liquid, then scoop again.
- Cookies not setting. Chill them for about 20 minutes, or stir a little more quick oats into the remaining mixture.
Variations
- Add-ins: mini chocolate chips, shredded coconut, chopped nuts or chopped dried fruit. Don’t overload the mix or the cookies won’t hold together.
- A little spice: a dash of cinnamon, or a pinch of flaky salt on top.
- Flax: stir 1 to 2 tablespoons of ground flaxseed in with the oats.
- Bars: press the mixture into a parchment-lined dish, chill until firm and cut into bars.
- Gluten free: use certified gluten-free oats.

Storage
Counter: Keep the cooled cookies in an airtight container at room temperature for 3 to 4 days. They don’t need to be refrigerated.
Refrigerator: For longer storage, keep them in an airtight container in the refrigerator for up to 1 week.
Freezer: You can also freeze them to keep them longer.
What to Serve With Them

Frequently Asked Questions
What is the secret to perfect no bake cookies?
Boil the sugar, butter and milk at a full rolling boil for exactly one minute, then work quickly while the mixture is warm.
Why are my no bake cookies not setting, or dry and crumbly?
Not setting usually means the mixture didn’t boil long enough. Dry and crumbly means it boiled too long, or there were too many oats or too much peanut butter.
Can I use quick oats or natural peanut butter?
Yes. Quick oats make a softer cookie. Natural peanut butter works if you stir it well, but the cookies may take longer to set.
How long do no bake cookies keep?
3 to 4 days in an airtight container on the counter, or up to 1 week in the refrigerator.
