Ingredients

  • 1 package instant vanilla pudding mix 3.4 ounces; instant, not cook-and-serve
  • 1/2 cup milk cold, whole or 2 percent
  • 8 ounces whipped topping such as Cool Whip, thawed but kept cold
  • 4 Granny Smith apples large, firm, cored and cut into 1/2-inch pieces (about 6 cups)
  • 4 Snickers bars 1.86 ounces each, cut into 1/2-inch pieces; keep a small handful for the top
  • 1/4 cup caramel sauce for drizzling
  • lemon juice optional, only if making ahead; just enough to coat the apples

Instructions

  • In a large bowl, whisk the instant pudding mix and cold milk until smooth and thick. With only 1/2 cup of milk it will look like a thick paste, not soft pudding; that is normal.
Step 1: Smooth, thick vanilla pudding paste in a glass mixing bowl.
  • Add the cold whipped topping and fold it in gently with a spatula until no streaks remain. Avoid vigorous stirring, which can deflate the topping.
Step 2: Smooth, fluffy vanilla coating after the whipped topping has been folded in.
  • Core the apples and cut them into 1/2-inch pieces. If making ahead, toss the pieces with a little lemon juice, then pat them dry with paper towels so the extra liquid does not thin the base.
  • Cut the Snickers bars into 1/2-inch pieces. Set a small handful aside for the top.
  • Add the apples and Snickers to the bowl and fold gently until every piece is coated.
Step 5: Chopped Granny Smith apples and Snickers evenly coated in the creamy base.
  • Cover the bowl and refrigerate for at least 1 hour, until cold.
  • Just before serving, scatter the reserved Snickers over the top and drizzle with the caramel sauce. Serve cold.

Notes

Best the day it is made; prepare up to 1 day ahead with treated, dried apples and airtight refrigeration. Refrigerated leftovers generally keep 2 to 3 days, but apples can brown and soften and the mixture becomes more watery over time. Stir gently or fold in a little extra whipped topping to smooth separated leftovers. Do not freeze; apples and whipped topping thaw watery. Snickers become firm in the refrigerator; fold them in just before serving if preferred. USDA FSIS says to refrigerate leftovers promptly in covered or airtight containers and keep cold perishable food at 40 F or below. USDA FSIS says to discard cold leftovers left out more than 2 hours, or more than 1 hour above 90 F. USDA FSIS says buffet bowls can be set in bowls of ice to keep them cold.
