FROSTED SPICE ISLAND COOKIES – Sometimes a little spice is called for in the way of a soft, maple-frosted cookie. Even if they are a little on the Christmasy side and the holiday is nowhere in sight.

After all the name of my blog is Cinnamon Spice and Everything Nice. {Duh.} A name that perfectly describes these tender cookies that will melt-in-your-mouth in a blizzard of warm spices, a hint of maple and brown sugar that is so delectable in a more-ish kind of way you won’t even care that they’re fitting of a Christmas cookie platter.

After all they are called Spice Island cookies. And islands are for vacationing. .. most often in the spring and summer. So, as it turns out, these are perfect for this season.

FROSTED SPICE ISLAND COOKIES

Total Time: 32 minutes

Soft, maple-frosted cookies bursting with cinnamon and warm spices.

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup dark brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 + 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • frosting:
  • 2 cups confectioners' sugar
  • 1/2 teaspoon vanilla or maple extract
  • 1 tablespoon maple syrup
  • 1 - 2 tablespoons whipping cream
  • 1/2 cup finely chopped walnuts, toasted

Instructions

  1. Preheat oven to 350 degrees F. Line 2 cookie sheets with silpats or parchment or grease lightly.
  2. In a large bowl beat butter and sugar on medium speed about 2 minutes or until light and fluffy. Beat in egg and vanilla extract until smooth. Scrape down the bowl.
  3. In a separate bowl whisk together the flour and next 6 ingredients. Add gradually to butter mixture beating on low speed until blended.
  4. Drop by rounded tablespoonfuls 2 inches apart. Bake 10 to 12 minutes. Cool on pan 5 minutes then remove to wire racks and cool completely.

Make the frosting:

  1. In a small bowl whisk the sugar, vanilla maple syrup and 1 tablespoon of the whipping cream to start until smooth. Add more sugar or cream as needed.
  2. Frost the tops of each cookie and sprinkle with walnuts.
