Easy to make no-bake cheesecake mousse overflowing with the fresh flavor of ruby red strawberries. It’s luscious, soft and fluffy like a sweet cloud.

The base of it is cream cheese with a touch of sour cream, sugar, vanilla and lemon zest. Homemade whipped cream is folded in to give it lightness.

It’s best very well chilled and makes a lovely, refreshing dessert for a warm night.

Especially when you can’t bake. Remember my broken stove? The super’s getting me a new one. Well, not a brand new one just another one. I miss baking so much I could almost scream. It’s been weeks and weeks and weeks.

Until then I’ll be stuffing my face with cheesecake mousse.

No-Bake Strawberry Cheesecake Mousse. This delightful dessert is a celebration of strawberries and creamy cheesecake, beautifully layered to create a luscious treat. Best of all, it requires no baking, making it a perfect go-to for any occasion.

Ingredients

  • 8 ounces cream cheese, at room temperature
  • 2 tablespoons sour cream
  • 5 - 6 tablespoons sugar, divided
  • 1 teaspoon vanilla
  • ½ teaspoon lemon zest
  • a pinch of salt
  • 2 + ½ cups finely diced strawberries, divided
  • 1 cup very cold whipping cream

Instructions

  1. In a medium mixing bowl beat the cream cheese on medium speed 2 minutes until creamy and smooth.Beat in the sour cream, 3 tablespoons sugar, vanilla, lemon zest and a pinch of salt. Taste and add another tablespoon of sugar if needed.Add 1 + ½ cups of the strawberries. Beat 2 minutes on medium speed.In a separate mixing bowl beat the whipping cream with 2 tablespoons sugar on medium speed until stiff peaks form. When you lift the beater it should stick to it.Fold half of the whipped cream into the cream cheese mixture.Layer in 4 (8 ounce) dessert cups: 2 tablespoons strawberries on the bottom, a layer of mousse, another layer of strawberries, a layer of mousse and whip cream.Chill well before eating 3 - 4 hours.
