These 4-ingredient slow cooker potatoes are soft, rich, cheesy comfort food with almost no prep. Just potatoes, soup, sour cream, cheddar, and a slow cooker doing the heavy lifting. The tender, creamy potatoes and bubbly cheddar topping make this an easy side dish for family dinners or casual lunches.
Why You’ll Love It
- Just four main ingredients — potatoes, soup, sour cream, and cheddar keep prep simple.
- Slow cooker convenience — the potatoes stay warm without heating up the oven.
- Creamy and cheesy — tender potatoes cook into a rich, bubbly casserole.
- Serves a crowd — makes eight to ten side-dish servings.
Ingredient Notes
For this, use 3 pounds of sliced Superior potatoes. They’re the potatoes this recipe was built around, and having them already sliced saves a surprising amount of aggravation. Just try to make sure the slices are fairly even if you’re buying or preparing them that way—thick chunks take longer, and there is nothing more irritating than discovering one potato slice still has the texture of a raw apple at serving time. The condensed cream of chicken soup gives you the savory, cozy backbone here. The regular canned kind works well, two 10.5-ounce cans, no apology. A cream sauce from scratch can be lovely, but this recipe keeps things simple.
Sharp cheddar holds its own against all that creaminess. Mild cheddar works, but it can get a little lost in there. If you like this, you'll love our Cheesy Mashed Potato Puffs.
And sour cream. Full-fat sour cream gives the best texture here. This is not the recipe where nonfat dairy is going to behave exactly the same. It’s not bad; the casserole will be fine. Fine is not what we’re aiming for with potatoes.
Ingredients
- 3 pounds sliced Superior potatoes
- 2 cans (10.5 ounces each) condensed cream of chicken soup
- 2 cups shredded sharp cheddar cheese, divided—1 1/2 cups for the potatoes and 1/2 cup for that melted top
- 1 cup sour cream
Instructions
Lightly grease the inside of your slow cooker. A little cooking spray works well, though a bit of butter rubbed around with a paper towel works too. An oval slow cooker works well.
In a large bowl, stir together the two cans of condensed cream of chicken soup, the sour cream, and 1 1/2 cups of the shredded sharp cheddar. It will look thick, because it is thick. Don’t add milk or water; the potatoes release enough moisture as they cook.

Add the sliced Superior potatoes to the bowl and gently fold them into the creamy mixture until every slice is coated. Use a big spoon or spatula; stirring too vigorously can break up the potatoes.
Transfer the coated potatoes and every last bit of the creamy mixture into the greased slow cooker. Spread everything into an even layer as best you can. It doesn’t have to be perfect, but getting it roughly level helps the slices cook at the same pace. For another easy option, see our Baked Garlic Parmesan Potato Wedges.
Cover and cook on low for 5 to 6 hours, until the potatoes are tender when pierced with a knife and the edges are hot and bubbling. Start checking near the five-hour mark if your potato slices are thin. Thicker slices will probably need the full six hours. Avoid lifting the lid every twenty minutes. Each peek lets heat out and can delay dinner.
Sprinkle the remaining 1/2 cup cheddar cheese evenly over the top. Cover again and cook for 10 to 15 minutes more, just until that cheese melts into a nice golden layer. Serve straight from the slow cooker while it’s hot and creamy.
Variations
The basic version is flavorful on its own. But a little black pepper—about 1/2 teaspoon—is lovely for more bite. Sometimes a spoonful of minced onion or a pinch of garlic powder works well when serving it with ham. Nothing wild. Just enough to wake it up.
Colby Jack melts beautifully. Monterey Jack or a cheddar blend will work too. With a mild cheese, add a small pinch of salt and pepper so the casserole doesn’t taste flat.
Frozen broccoli can release enough water that the sauce loosens up more than expected.
Another easy potato side is Fried Potato Cakes, ready in about 15 minutes from cold mashed potatoes.
Storage & Reheating
Leftovers will keep in the refrigerator for about three to four days in a covered container. They thicken up quite a bit overnight, which is normal. Spoon a portion into a microwave-safe bowl, cover it loosely, and heat it in short bursts until hot. A small spoonful of sour cream stirred in afterward helps bring back some of that creamy texture. You can also reheat a larger amount in a covered baking dish at a low oven temperature, but microwave reheating is quicker.
For holding this for lunch or dinner, the warm setting on the slow cooker is fine for a short stretch. Give it a gentle stir around the edges before serving if it sits awhile. The sauce tends to settle, and the potatoes need a little encouragement. Avoid mashing them up—just nudge things around.
Final Notes
There’s something very comforting about a recipe that doesn’t demand much. A slow cooker full of potatoes feels downright civilized. Try our Ham and Potato Au Gratin next.
This casserole pairs well with roast chicken, meatloaf, baked ham, or even simple sandwiches for a larger meal. A crisp green salad helps cut through the richness. If you like this, you'll love our Mississippi Mud Potatoes.
