ROASTED BALSAMIC BRUSSELS SPROUTS WITH FETA & CRAISINS – Fresh brussels sprouts roasted with balsamic vinegar and olive oil then tossed with creamy crumbled feta cheese and tart-sweet dried cranberries. Their full of all the flavors – sweet, sour, savory – and all the textures – soft, dense and chewy.

This is my favorite way to eat sprouts! I’ve made them before and didn’t get a chance to share them with you. Remember the other day when I went shopping and thousands of peppers tried to come home with me? Well, there was also the biggest vat of fresh brussels sprouts I’ve ever seen in my entire life.

I immediately thought of these.

I swear they will make you change your mind about brussels sprout if you’re a tried-and-true hater the same way I was. If you already like them then you will love this! (Unless you don’t like feta then you can use Parmesan or even goat cheese instead.)

Let’s eat all the brussels sprouts and be all happy about it.
