Golden Seared Cod with Herb Butter Sauce

Ingredients
- 4 cod fillets 6 oz each
- 2 tbsp olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 4 oz unsalted butter
- 1 clove garlic minced
- 1/2 lemon juice only
- 3 tbsp fresh parsley finely chopped
- 2 tbsp fresh dill chopped
- 1 tbsp fresh chives chopped
Instructions
- Pat the cod fillets dry with a paper towel. Season both sides generously with salt and freshly ground black pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place cod fillets in the pan and cook for 3-4 minutes on each side until golden brown and cooked through.
- Remove cod from the pan and set aside. In the same skillet, reduce heat to medium and add unsalted butter.
- Once butter melts, add minced garlic and cook for 30 seconds until fragrant. Stir in parsley, dill, chives, and lemon juice.
- Return cod to the skillet, spooning herb butter sauce over the fillets. Warm for 1-2 minutes and serve with extra sauce drizzled on top.
