Berry cobbler with cake mix and Sprite is a warm, bubbling pan of juicy mixed berries under a soft, golden, cake-like topping, made with three ingredients and no mixing bowl. It is the dessert for busy weeknights, last-minute company and potlucks, and it is best hot from the oven.
How to make berry cobbler with cake mix and Sprite: Spread frozen mixed berries in a sprayed 9-by-13-inch baking dish. Sprinkle dry yellow cake mix over the berries to cover them. Pour the Sprite over the cake mix, wetting all of the dry mix, and do not stir. Bake at 350°F for 45 to 50 minutes and serve hot.
Why You’ll Love It
- Three ingredients. Frozen berries, a box of cake mix and a can of soda.
- No bowl and no mixer. Everything is layered right in the baking dish.
- Five minutes of prep. The oven does the rest.
- Straight from the freezer. The berries go in frozen.
Ingredient Notes
Frozen mixed berries. Twenty-four ounces. Do not thaw them.
Yellow cake mix. One 16-ounce box. Use it dry, straight from the box. Do not add the eggs, oil or water listed on the package.
Sprite. Twelve fluid ounces, which is one regular can of lemon-lime soda.
Ingredients
- 24 ounces mixed berries, frozen
- 1 box yellow cake mix (16 ounces), used dry
- 12 fluid ounces Sprite
How to Make Berry Cobbler with Cake Mix and Sprite

2. Layer the berries. Spread the frozen mixed berries evenly across the bottom of the dish.
3. Add the cake mix. Sprinkle the dry yellow cake mix over the berries, covering them completely.
4. Pour the Sprite. Pour the Sprite over the cake mix, aiming to wet all of the dry mix. Do not stir the layers together.
5. Bake and serve. Bake for 45 to 50 minutes. Serve hot.
How to Pour the Sprite Without Stirring
The soda is the only liquid in the topping, so where it lands matters. Any patch of cake mix the soda misses can bake up dry and powdery. The goal is to wet the whole surface and then leave it alone.
| Step | Do this | Not this |
|---|---|---|
| Berries | Spread them in an even layer, still frozen | Pile them in the middle |
| Cake mix | Sprinkle it dry over the berries until they are covered | Prepare it as the box directs |
| Sprite | Pour slowly, moving back and forth across the whole dish | Dump it all in one spot |
| After pouring | Leave the layers as they are | Stir them together |
Pour the can slowly, in rows, the way you would water a garden bed, so every part of the dry mix gets wet. Go into the corners too. Then put the spoon away. The layers stay separate, and the topping forms as it bakes.
You will find recipes that stir the cake mix and soda together first, and recipes that use butter in place of soda. Those are other methods. This one is layered and not stirred.
Tips for Success
What does adding Sprite to cake mix do?
It wets the dry cake mix so it can bake into a topping. The carbonation is said to help the topping bake up fluffy, and the lemon-lime flavor goes well with berries.
Do I thaw the berries?
No. They go into the dish frozen, spread in an even layer so the cake mix sits flat on top.
Do I follow the directions on the cake mix box?
No. Only the dry mix is used. The soda is the only thing added to it.
How do I know it is done?
The recipe gives a time, 45 to 50 minutes at 350°F, and no visual cue. Look for a topping that is no longer wet or powdery on the surface before you take it out.
What if my cake mix box is a different size?
This recipe is written for a 16-ounce box. Many boxes on the shelf are 15.25 ounces. The recipe gives no adjustment for the smaller size, so I cannot promise the same result, but the method is the same: use the mix dry and wet all of it with the soda.
What size dish do I need?
A 9-by-13-inch baking dish, sprayed with nonstick spray.
Variations
Fresh berries. Fresh berries can be used in place of frozen.
One kind of berry. Use a single variety, such as all blueberries, in place of the mix. That makes a three-ingredient blueberry cobbler.
Another soda. Another sweetened lemon-lime soda can stand in for the Sprite.
These are suggested swaps, not things the recipe gives separate times for, so keep an eye on the pan.
How Long Does It Take?
About 50 minutes: 5 minutes to layer the dish and 45 minutes or a little more in the oven. The recipe makes 8 servings. It is served hot, so time it to come out as dinner ends.
Storage & Reheating
USDA FSIS says to refrigerate leftovers within 2 hours in shallow, covered containers and to use them within 3 to 4 days. If you reheat leftovers, heat them to 165°F, checked with a food thermometer. If you freeze leftovers, thaw them in the refrigerator, not on the counter.
