This slow cooker caramel dip is silky, creamy, and made with just three main ingredients. Toss everything in the slow cooker, then serve it warm with apples, pretzels, vanilla wafers, or whatever sounds good. You’re going to love how easy it is to make something that tastes this rich and special.
Why You’ll Love It
- Just three main ingredients — cream cheese, sweetened condensed milk, and soft caramels.
- Easy slow cooker recipe — minimal prep and no stovetop stirring.
- Stays warm and scoopable — perfect for setting out with apples, pretzels, and cookies.
- Feeds a crowd — makes about 10 to 12 servings.
- Rich but balanced — cream cheese keeps it from tasting like straight-up melted candy.
Ingredient Notes
The ingredient list is mercifully short, so use the regular stuff and don’t overthink it.
Cream cheese needs to be softened enough to cube. You don’t need it warm and squishy, just not rock-hard from the refrigerator.
For the sweetened condensed milk, make sure it says sweetened condensed milk, not evaporated milk. I know, I know—they’re both in little cans and the labels can look confusing if you’re rushing. But they are absolutely not interchangeable here.
Soft caramels are what you want—the individually wrapped kind from a 14-ounce bag. Any regular brand is fine. I’ve used the plain old Kraft ones more times than I can count. You’ll need to unwrap them all, which is mildly annoying, but it gives you time to listen to half a podcast.
Ingredients
- 2 (8-ounce) blocks cream cheese, softened and cut into large cubes
- 2 (14-ounce) cans sweetened condensed milk
- 1 (14-ounce) bag soft caramels, unwrapped (about 11 to 14 ounces is fine, depending on the brand)
- Butter or nonstick spray, for greasing the slow cooker
Instructions
- Lightly grease the inside of a small slow cooker—something in the 2- to 4-quart range works best—with butter or nonstick spray. Do not skip this if you can help it; caramel has a stubborn streak, and scraping burned sugar out of a crock is not how anybody wants to spend a Sunday evening.
- Cut the softened cream cheese into large cubes so it melts more evenly. If yours is still chilly from the refrigerator, let it sit out for 15 to 20 minutes while you unwrap the caramels. That’s usually enough time.
- Put the cream cheese cubes in the bottom of the greased slow cooker. Pour both cans of sweetened condensed milk over the top, letting it settle down around the cream cheese. It will look a little odd at this stage—pale, lumpy, not especially promising. Hang in there.
- Scatter the unwrapped soft caramels evenly over the cream cheese and condensed milk. Try not to pile every caramel in one spot, though it will still come together eventually. Slow cookers are forgiving.
- Cover the slow cooker and cook on LOW for 1 1/2 to 2 hours, until the caramels are fully melted and the edges look thick and bubbly. Resist lifting the lid every fifteen minutes to check, because each peek lets out heat and stretches the whole process along.
- Once the caramels have melted, use a sturdy whisk or wooden spoon to stir the mixture slowly but thoroughly, scraping along the bottom and sides of the crock. Keep stirring until the cream cheese is completely blended in and there are no white streaks left. It should become glossy, smooth, and that deep warm caramel color—liquid gold, if we’re going to be a little dramatic about it.
- If you want the pretty marbled top, stop stirring when the dip is almost completely smooth and leave a few pale ribbons of cream cheese showing. Use the back of a spoon to gently swirl the surface in circles. It looks lovely for about five minutes before it gets scooped up, so take your picture quickly if you’re one of those people.
- Turn the slow cooker to WARM for serving. Prop the lid slightly with a spoon or a folded kitchen towel so too much condensation does not drip back into the dip. Give it a gentle stir now and then to keep everything silky and smooth.
- Serve warm with sliced apples, pears, pretzel rods, vanilla wafers, graham crackers, or cubes of pound cake or angel food cake. It is also very good spooned over brownies, vanilla ice cream, or warm cinnamon rolls, though that last one is the sort of breakfast decision you make and then keep to yourself.
Variations
For a sweet-salty version, sprinkle 1/2 to 1 teaspoon of flaky sea salt over the top just before serving.
In the fall, I sometimes stir 1 teaspoon of ground cinnamon and a pinch of nutmeg into the finished dip. It makes the whole thing taste a little like caramel apple season without turning it into one of those aggressively spiced desserts that smell like a candle store. You can also use caramel-flavored sweetened condensed milk if you happen to find it.
Use dark or brown sugar caramels for a deeper flavor. I prefer regular caramels, I think. Actually, I like both—I just don’t always have the patience to hunt down special candy when the standard bag is sitting right there at the grocery store.
If you want a firmer dip that clings more thickly to apples and pretzels, reduce the sweetened condensed milk by 1/4 cup. I tried making it into bars once by pouring it over a shortbread crust, chilling it, and cutting squares. It tasted good, but the cutting was a mess and I ended up with a pan of caramel rubble. Delicious rubble, but still.

Storage & Reheating
If you somehow have leftovers, let the dip cool and transfer it to an airtight container. It keeps in the refrigerator for up to 5 days.
It will firm up quite a bit in the fridge—that’s normal. Reheat it gently in the microwave in short bursts, stirring after each one, until it loosens and turns smooth again. You can also put it back in the slow cooker on LOW and stir it until warmed through.
Don’t blast it in the microwave and walk away. Caramel can go from perfectly soft to strange and overheated in a hurry.
Final Notes
Make this when you need something easy and a little special. Make it when apples are cheap and crisp, when the weather turns chilly, when you’ve got company coming and not much time. Or make it on a random Tuesday night and eat it with a spoon standing at the counter. No judgment here.
