This slow cooker chicken stew turns chicken, potatoes, carrots, and water into a rich, golden broth with almost no effort. Layer everything in the morning, then come home to tender chicken and vegetables that hold their shape. You’re going to love how comforting and budget-friendly it is without a long grocery list or extra seasonings.
Why You’ll Love It
- Set-it-and-forget-it easy — layer everything in the slow cooker, add water, and let it cook low and slow.
- Budget-friendly ingredients — bone-in chicken, potatoes, carrots, and water make a filling meal without a long grocery list.
- Rich, golden broth — bone-in chicken builds deep flavor without packets, cream soups, or lots of spices.
- Tender but not mushy vegetables — potatoes and carrots cook until soft while still holding their shape.
Ingredient Notes
Bone-in chicken is important here because those bones are doing the heavy lifting for the broth. Chicken legs, thighs, or a cut-up whole chicken all work beautifully. Thighs and drumsticks stay tender and don’t get dry after the long cook. Leave the skin on or take it off—either is fine. Skin-on chicken gives the broth a little more richness, though you may see some fat on top when it’s done. That doesn’t bother me one bit, but you can skim it if it does. Use russet or yellow potatoes. Russets make a slightly softer, more old-fashioned stew situation; yellow potatoes tend to hold their shape a touch better. Peel them for this stew.
Regular carrots are what you want, peeled and sliced into thick rounds. Baby carrots will technically cook, but they don’t taste quite the same and they can get mushy if you leave the stew going toward the longer end of the cooking time. If you like this, you'll love our Slow Cooker Beef Ramen.
Water is the only liquid, which sounds downright stingy until you taste the finished broth. Use enough to just cover everything—usually 4 to 6 cups, depending on your slow cooker. Don’t drown it. We want stew, not a public swimming pool.
Ingredients
- 3 to 3 1/2 pounds bone-in chicken pieces, such as legs, thighs, or a cut-up whole chicken, skin on or off
- 2 pounds russet or yellow potatoes, peeled and cut into 1 1/2-inch chunks—roughly even is good enough; nobody needs a ruler
- 1 pound carrots, peeled and sliced into 1/2-inch rounds
- 1 1/2 to 2 teaspoons salt, or to taste; I start with 1 1/2 teaspoons
- 1/2 to 1 teaspoon black pepper, depending on how peppery your family likes things
- 4 to 6 cups water, enough to just cover the chicken and vegetables
Instructions
Peel the potatoes and cut them into chunks about 1 1/2 inches wide. Try to keep them reasonably close in size so you don’t wind up with one potato chunk the size of a grapefruit and another that disappears into the broth. Peel the carrots and slice them into 1/2-inch rounds.
Put the potato chunks in the bottom of your slow cooker in an even-ish layer. Scatter the carrots over the potatoes. This vegetable layer keeps the chicken from sitting directly on the bottom and gives everything a chance to cook gently together.
Arrange the bone-in chicken pieces over the vegetables in as close to a single layer as you can manage. Nestle legs and thighs together rather than piling them up in a big chicken mountain.

Sprinkle the salt and black pepper over the chicken and vegetables. It will not look like enough seasoning at this stage. Trust the process. The long cooking time and the chicken bones will build a lot of flavor.
Pour in 4 to 6 cups of water, using just enough to cover the chicken and vegetables. The amount depends entirely on the shape and size of your slow cooker. You want the ingredients submerged, but don’t add extra water “just in case.” That is how you end up with weak broth, and weak broth is a sad little thing. For another easy option, see our Roasted Asparagus and Carrots.
Cover the slow cooker and cook on LOW for 7 to 9 hours, until the chicken is very tender and the potatoes and carrots are soft but still holding their shape. Don’t use frozen chicken here; thaw it completely in the refrigerator first. Frozen chicken in a slow cooker is not something to gamble on.
When the stew is done, check that the chicken has reached at least 165°F in the thickest part. It will often go beyond that with this long, low cooking method, and that is perfectly fine because bone-in dark meat stays wonderfully tender.
Taste the broth and add more salt and pepper if it needs it. Do not skip this final taste. A small pinch of salt at the end can take it from “nice enough” to “well, would you look at that.”
Ladle the stew into wide bowls, making sure each bowl gets chicken, potatoes, carrots, and plenty of that golden broth. You can serve the chicken on the bone, or gently pull the meat from the bones and stir it back in if preferred.
Variations
This stew is excellent exactly as written, and the simplicity is the point. Still, if you have an onion rolling around in the pantry basket, you can tuck in a halved onion at the beginning. A celery stalk or a bay leaf adds a little extra background flavor too; just fish them out before serving.
A splash of soy sauce adds depth to the broth. Not much—just enough to deepen the broth. A spoonful of chicken bouillon can help if you happened to buy especially lean chicken, though the bones should give you plenty of richness on their own.
For a thicker stew, mash a few cooked potato pieces against the side of the slow cooker and stir them into the broth. But the clear, brothy version has its appeal. Cooking is not jury duty.
Serve it with crusty bread, cornbread, or plain white sandwich bread for dunking. Pickles on the side are surprisingly good, especially a sharp dill pickle.
Storage & Reheating
Let leftovers cool promptly, then put them into shallow containers and refrigerate within 2 hours. They’ll keep well for 3 to 4 days. Store the broth with the chicken and vegetables because the potatoes stay from drying out and the flavors get even better by the next day. You might also like our Carrot Cake Cookies.
For longer storage, freeze portions for up to 2 to 3 months. The potatoes may soften a little after freezing, but this is humble chicken stew, not a beauty pageant. It will still taste good.
Reheat refrigerated leftovers on the stove over medium-low heat until steaming hot, or use the microwave in covered bowls, stirring once or twice if you can remember. Add a splash of water if the broth has thickened up too much in the fridge. Let it sit a minute. We are adults. We can learn.
Final Notes
There is a particular kind of comfort in a meal that does not ask much of you. No browning, no separate pans, no last-minute sauce that suddenly breaks. Just chicken, potatoes, carrots, water—and time.
The meals people remember are often the ones that arrive at the right moment. The house warm. The windows dark. The slow cooker ready before you’ve even found the ladle.
This stew is plain, yes. Plain in the best possible way. Try our EGG FRIED RICE next.
