I usually serve it over egg noodles because that’s how my family likes it best. Mashed potatoes are wonderful too, especially if it’s cold or rainy and everything outdoors looks tired. Rice works. Toast works. Once I piled it onto toasted ciabatta with a little green salad on the side and felt very fancy for a woman whose dinner came out of a can and a Crock-Pot. The bar is low sometimes. That is not a criticism.

Ingredient Notes
Use boneless, skinless chicken breasts if that’s what you have. They shred nicely and stay fairly mild, letting the creamy sauce do its thing. Boneless thighs are also very good here—maybe even better, if I’m being honest—because they stay juicy and are harder to overcook. Then again, I nearly always buy breasts because that is what ends up in my cart. So much for honesty.
For the cream cheese, plain full-fat brick-style cream cheese is what I use. The kind in the tub is softer and may work in a pinch, but it doesn’t melt quite the same way. Let the block soften on the counter a little, or cut it into cubes. I cut it into cubes when I remember. Which is perhaps half the time.
Your can of condensed cream of chicken soup matters more than you’d think. Any regular 10.5-ounce can works beautifully. You can also use a larger can up to 15 ounces, or a ranch-flavored cooking sauce if you enjoy that herby ranch flavor. I’ve used cream of mushroom when I was out of cream of chicken, and nobody complained.
No extra broth or water is needed at the beginning. The chicken gives off liquid as it cooks. Resist the urge to add more, even if the whole thing looks a little too thick and odd in the first hour. It sorts itself out. Most things in a slow cooker do. Unlike the junk drawer.

Instructions
Lightly grease the insert of a 4- to 6-quart slow cooker with a little oil or nonstick spray. This is not strictly thrilling kitchen work, but it helps with cleanup, and I have scraped dried creamy sauce out of a Crock-Pot at 9 p.m. enough times to know better.
Lay the 2 to 2 1/2 pounds of chicken breasts or thighs in the bottom of the slow cooker in as even a layer as you can manage. A little overlap is fine; they shrink as they cook anyway. No need to brown them first, which is precisely the point of this dinner.
Spoon or pour the condensed cream of chicken soup, or the ranch-flavored sauce, over the chicken. Spread it around with a spatula or the back of a spoon so most of the chicken gets coated. Do not add extra liquid here—the chicken will make its own juices, and too much liquid turns this into something closer to creamed chicken soup. Not terrible, just not what we’re after.
Set the block of cream cheese on top of the soup-covered chicken, or scatter the cubes over the surface if you cut it up. Cubes melt a little more evenly, but I have plopped the whole block right on top many a Tuesday and lived to tell the tale.
Cover the slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2 1/2 to 3 hours, until the chicken is cooked through, very tender, and easy to pull apart with forks. Slow cookers have personalities—some run hot like my old beige one did, bless its unreliable heart—so begin checking at the earlier end of the time range.
Turn off the slow cooker or switch it to WARM once the chicken is tender. Use two forks to shred the chicken right in the pot into bite-sized pieces. If you prefer larger pieces, don’t shred it to smithereens. I tend to get carried away while talking and end up with very fine chicken threads.
Stir everything together thoroughly until the melted cream cheese, soup, chicken juices, and shredded chicken make a smooth, creamy sauce. It may look separated at first. Keep stirring. This is the part where it comes together and suddenly looks like dinner instead of a questionable science project.
If the sauce seems thicker than you like, stir in a small splash of milk, chicken broth, or pasta cooking water if you’re serving it over egg noodles. Taste before adding salt and pepper, then season lightly if needed. Serve hot over noodles, mashed potatoes, rice, or toasted bread—whatever is easiest and least likely to cause another trip to the store.
Variations
Make this with chicken thighs and ranch-flavored sauce, then stir in frozen peas near the end. If you want to add vegetables, stir in thawed frozen mixed vegetables or frozen peas during the last 30 minutes so they heat through without turning to mush.
A sprinkle of dried thyme, parsley, or Italian seasoning can be nice stirred in with the soup. If you like a stronger tang, add a spoonful of ranch seasoning or a little splash of buttermilk after cooking. Not too much, though. I once got heavy-handed with buttermilk and the sauce tasted like it was trying to become salad dressing. We ate it, because nobody was making a second dinner, but it was not my finest hour.
Cream of mushroom or cream of celery soup can stand in for cream of chicken. Reduced-fat cream cheese and lower-sodium soup will work too, though the sauce is a little less rich. That may be a good thing after a weekend of burgers, birthday cake, and whatever mysterious snack came home from the gas station “for later.”
Storage & Reheating
Keep leftover cream cheese chicken in a covered container in the refrigerator for several days. I usually portion it out over noodles if there are noodles left, though they do soak up sauce overnight like nobody’s business. Sometimes it is better to store the chicken mixture separately and make fresh rice or noodles the next day. Sometimes I do not have that level of foresight.
Reheat it gently on the stovetop over low heat or in the microwave, stopping to stir once or twice. The sauce will thicken in the refrigerator—completely normal—so loosen it with a splash of chicken broth, milk, water, or pasta water. Start small. You can always add more, but you can’t un-add it, which is a lesson I also learned while painting the laundry room a color called “soft butter.”
It makes a very good next-day sandwich on a soft roll, especially with sliced pickles or a little coleslaw for something sharp against all that creaminess.
Final Notes
There is something comforting about a dinner that does not ask much of you. Not every evening calls for browned butter and fresh herbs and six pots going at once.
