In a medium mixing Bowl, beat the softened cream cheese and brown sugar together until the mixture is smooth, fluffy, and fully combined. A hand mixer gets that nice whipped texture, but a sturdy spoon also works. Scrape down the sides once or twice; there always seems to be a little pocket of plain cream cheese hiding underneath.
Spread the cream cheese mixture into a shallow serving dish or a plastic container, smoothing the top with a spoon or spatula. A shallow dish is best because apple slices can actually reach the layers without snapping in half.
Pour the caramel sauce over the cream cheese layer and gently spread it into an even layer. Sprinkle the crushed peanuts over the caramel. Don’t press them in too hard or they sort of disappear, and the whole point is that little bit of crunch on top.
Arrange the sliced apples around the dip or serve them on the side. Chill until ready to serve, or put it out right away. If slicing apples ahead, a quick toss with a little lemon water can help keep them from browning, though apple slices rarely sit around long enough for that to matter.
Variations

For a nut-free version, skip the peanuts and scatter toffee bits, mini chocolate chips, or a light sprinkle of granola across the caramel. The toffee bits are especially nice, although they do make the dip sweeter.
Pretzels are terrific with this, especially the small twisty ones that can scoop a little. Vanilla wafers and graham crackers work too. Cinnamon pita chips are too crunchy and somehow make the whole thing feel like a dentist’s waiting-room snack. Stick with apples, pretzels, or the Classic cookie situation.
Storage & Reheating
Cover leftover dip tightly and refrigerate it for up to 3 days. I don’t recommend freezing it; cream cheese gets odd after thawing, and caramel can turn watery. Avoid that kind of surprise.
You don’t need to reheat this dip, but letting it sit on the counter for 10 to 15 minutes after it comes out of the refrigerator helps. Straight-from-the-fridge cream cheese can be a little firm, and the caramel loses some of its soft, drizzly charm. Don’t leave it out for hours, naturally.
If making it ahead, prepare the cream cheese and brown sugar layer up to a day in advance, cover it, and refrigerate. Add the caramel and peanuts just before serving so the peanuts stay crunchy and the top looks fresh.
